Backyard Spanish Rice

Ingredients :
2 tbl olive oil
1/2 cup chopped tomato
1/2 cup chopped red pepper
1/4 cup chopped red onion
1 tbl minced garlic
2 cup long grain rice
3 1/2 cup cold water
2 tbl rice wine vinegar
2 tbl Worcestershire sauce
1 dsh salt and pepper
splash freshly squeezed
lemon juice
splash freshly squeezed
lime, juice
Method :
• Heat oil in Dutch oven over medium heat. Add onions,
peppers, and garlic, and saute for 1 minute or until softened.
• Add tomatoes, rice, water, vinegar, Worcestershire
sauce, salt and pepper, bring to a boil, cover, and turn heat to
low. Simmer, covered for 20 minutes or until rice is tender.
• Remove lid, fluff rice with a fork and sprinkle lemon and
lime juice over top. Serve immediately.
