Huevos Rancheros

Huevos Rancheros
2 lbs. Firm tofu, drained & 1/2-inch cubed
1 Green bell pepper, diced
1/2 cup Onions, diced
2 Tbs. Chicken-style seasoning
1 Tbs. Garlic powder
3 Tbs. Oil
Ranchero Sauce:
4 Fresh tomatoes, diced
1/2 cup Green onions, chopped
2 cloves Fresh garlic, crushed
2 Jalapenos, cored and diced
1/2 cup Fresh cilantro, chopped
2 tsp. Salt
1/4 cup Tomato sauce
1 Green bell pepper, diced
Saute Tofu until lightly brown, then add next five ingredients,
and continue to saute until vegetables are cooked. Set
aside. Put all ingredients for Ranchero sauce in a skillet,
and simmer on medium heat stirring until a thick consistency.
Combine the Tofu mixture and Ranchero mixture,
and then simmer most of the moisture out.
Serving Suggestions:
• serve on Hot flour tortilla with refried beans
• with a fresh avocado or vegetable salad
