POTATO SALAD

2 lb (1 kg) potatoes
3 spring onions
Mayonnaise
Natural yoghurt
Chives
Parsley
Lemon juice
Salt & pepper
Method
1. Wash and boil the potatoes in their skins until just soft, then
leave to cool for a few minutes. (Either remove the skins while
the potatoes are still warm, or leave them on.)
2. Dice the potatoes and put them in a large bowl with the
mayonnaise (see page 111 for how to make it), yoghurt,
chopped spring onions, herbs, lemon juice and salt and pepper;
mix gently and adjust the seasoning and consistency according
to taste.
