Scott's South-Meets-South-of-France Rub

Ingredients :
2 tbl brown sugar - (packed)
1 tbl sea salt
1 1/2 tsp crushed dried rosemary
1 tsp freshly-cracked black
pepper
1 tsp dried thyme
3/4 tsp ground cumin
1/2 tsp ground oregano
1/2 tsp ground cardamom
1/4 tsp ground coriander seed
1/4 tsp ground cinnamon
1/4 tsp powdered ginger
1/4 tsp sweet Hungarian paprika
1 sm bay leaf finely crumbled
4 x garlic cloves minced to a
paste
Method :
• Combine ingredients. Rub on leg of lamb before grilling,
smoking or roasting. Also good with chicken, beef and pork.
Refrigerate unused rub up to several weeks.
