Vegetable Croquettes

Ingredients :
3 cup potatoes, medium
1 x onions, medium
1/2 cup carrots, medium
1 stk celery
1/2 cup peas
1/2 cup corn kernels
2 tsp butter
1 tsp fresh herbs (chopped)
1/10 tsp cayenne pepper
2 x eggs
1 cup breadcrumbs
1/4 cup vegetable oil
Method :
• Peel and cook potatoes in boiing salted water until
tender. Mash fine.
• Peel and finely dice onions, carrots and celery.
• Cook gently in butter until tender.
• Combine the potato, onion, cooked mixed vegetables and
spices, make spoonfuls into patties, and flatten.
• Roll them in egg and coat ith breadcrumbs.
• Heat oil in a pan and cook patties on both sides until
golden brown.
• Serve with freshly made tomato sauce.
