I made these tarts with pastry cream with chocolate Valentina Gigli garnished with a raspberry on top.
250 g whole milk
125 g fresh cream
80 g sugar
65 g egg
15 g corn starch
175 g dark chocolate
Heat milk and cream with half the sugar, in the meantime, whisk the egg yolks with remaining sugar and finally the starch.
Just salt the boiling milk pour half of egg yolks, mix and bring everything up to the fire to thicken, pour the cream over the chocolate mix and put to cool in contact with film.
