Swordfish baked with sweet potatoes
Servings: 4 people
Time: 50 minutes
ingredients
800 Swordfish
400 g of sweet potato
300 g of tomatoes
1 glass of white wine
2 onions
1 tablespoon fennel seeds
1 sprig of thyme
3 lemons
1/2 cup olive oil
Salt q.b.
Pepper q.b.
preparation:
Cook the onions and tomatoes in wine with thyme and fennel seeds. Season with salt and pepper. Cook for about ten minutes to steam the sweet potatoes that have since been peeled and cut into slices. Put the potatoes in a pan where you put the oil, place the onions and tomatoes cooked in wine and finally swordfish. Pour over all a little oil, lemon juice, salt and pepper. Cook for about thirty minutes in the oven to 180 degrees.
