POTATOES

Not only are potatoes packed with Vitamins B, B6 and C, as well as
all the essential minerals, they’re also fat-free, low in calories, an
excellent carbohydrate, a good source of fibre (with their skins on) and
contain no cholesterol. Never mind alfalfa sprouts and goji berries,
potatoes are the original superfood – and if that’s not enough to make
you rush out and buy them in bulk, it’s worth remembering that they’re
also dirt cheap – credit crunch or no credit crunch.
Lots of the supermarkets sell large sacks of potatoes (27 lb+/12.5
kg) for well under a fiver, and if you don’t mind washing the dirt off
(and why would you at that price?) you can’t go wrong.
I love potatoes however they’re cooked, and I can’t think of any other
food that’s this versatile, nutritious, affordable and just plain perfect,
which is why potatoes have got a section all to themselves in this book.
Tips
Don’t keep potatoes in plastic bags. Unless they’re in a
brown paper sack to begin with, transfer them into an old
cardboard box and store in a cool, dark, dry place.
Mixing mashed or diced fried potatoes with other
vegetables makes the rest of the ingredients stretch
further.
