SWEET AND SOUR FRIED EGGS

* Chicken or duck eggs, 6 eggs.

* Tamarind 3/4 cup.

* Palm sugar 1/4 cup.

* Fish sauce 1/4 cup.

* Vegetable oil 1/4 cup.

* The red onions, 10-15.

* Coriander leaves (for garnishing).
How to to do step by step.

1. The oil in a wok until hot. Then the egg to fry eggs. Fry until golden crisp. Then to arrange them on a plate.

2. The oil left over from poaching. And red onions to fry until golden (be careful if burning is bitter and delicious) and then to drain.

3. Use the remaining oil and fry onion and fried egg. (If you have to scoop it out. I have about 3 tablespoons, or to use any oil), palm sugar, tamarind juice and fish sauce until well mixed. May be adjusted according to taste. (The original flavor is sour and sweet as well).

4. To pour the water in the third stage to pour on the egg to the plate already. Garnish with fried onions and coriander. Serve immediately with steamed rice.
