Arroz Entomatado “Spanish Rice”

2 cups Brown rice, uncooked
4 1/2 cups Tomato juice
1 medium Onion
1/2 each of Red, yelow, and Greeen peppers
2 cloves Garlic
1/2 cup Fresh cilantro, chopped
3 Tbs. Oil
1 tsp. Chili powder
1 tsp. Salt
Saute all fresh ingredients in oil. Add all remaining ingredients
in with sauteed vegetables and mix together. Place
in covered baking dish and bake at 350 F for 1 hour, or until
rice is completely cooked.
