Cinnamon & nutmeg
1⁄2 teaspoon ground cinnamon
1⁄2 teaspoon ground nutmeg
50g/2oz caster sugar
150ml/5fl oz double cream
250g/9oz mascarpone cheese
400ml/14fl oz fresh custard
• Put the cinnamon, nutmeg, sugar
and cream in a small heavy pan.
Bring slowly to the boil, then put to
one side to cool.
• Put the mascarpone in a large
bowl and beat until smooth. Stir in
the custard and the cooled spiced
cream. Pour the mixture into a
shallow freezer container, and
freeze for 21⁄2 hours.
• Beat to break up the ice crystals,
and freeze for a further 21⁄2 hours
