4 dessert pears
25ml/1fl oz apple juice
100g/4oz plain flour
1 teaspoon ground ginger
1 teaspoon granulated sugar, plus
extra for sprinkling
• Preheat the oven to 190°C/375°F/Gas mark 5.
• Peel, core and slice the pears. Put in a 1.2-litre/2pt ovenproof serving
dish with the apple juice.
• Sift the flour and ginger into a bowl, then rub in the butter with your
fingertips and stir in the sugar. Spoon the mixture over the pears, and
press down lightly. Sprinkle with a little extra sugar.
• Bake for 45 minutes until golden. Serve hot with cream or custard.
