Banana dosa
serves 4
ingredients
4 ripe bananas, peeled
and mashed
200g/7oz rice flour
100g/4oz plain flour
2 tablespoons white sugar
2 tablespoons vegetable oil
1⁄2 teaspoon crushed cardamom
seeds
pinch of salt
• Put the bananas, rice flour, plain flour, sugar, oil, cardamom and pinch
of salt in a large bowl. Make a well in the centre and pour in
100ml/31⁄2floz water. Blend with a wooden spoon to form a thick batter,
adding a little more water or flour if required.
• Heat a frying pan over a medium heat. Rub the surface with some oil
using a brush or kitchen paper.
• Pour a large spoonful of the batter into the pan, and spread it out lightly.
Cook for 5 minutes or until golden brown underneath, then turn over and
cook for a further 3 minutes. Continue until all the batter has been used.
• Serve hot with ice cream.
