Child’s birthday cake
275g/10oz caster sugar
350g/12oz self-raising flour
grated zest of 2 oranges
• Preheat the oven to 160°C/325°F/Gas mark 3. Grease a 3.6-litre/6pt
ovenproof glass mixing bowl. Line the bottom with greaseproof paper.
• Beat together the butter, sugar, eggs, flour and orange zest. Turn into the
bowl and level the surface. Bake for 1 hour 10 minutes until just firm.
• Loosen from the bowl by running around the edge with a knife, then turn
out and leave to cool on a wire rack. This is the perfect base cake for
brightly coloured icing for a child’s birthday.
